In Jazz, you can leave out nonessential notes of a chord & have it still function as that chord.
The 3rd and 7th are the most important (Guide Tones) because they establish the quality of a chord. But the root & 5th are less important, and the 9th, 11th & 13th (called “tensions”) are even less important.
